Navratri Thali
Ingredients:
- Kuttu atta (buckwheat flour)
- Singhara atta (water chestnut flour)
- Sabudana (tapioca pearls)
- Samak rice (barnyard millet)
- Potatoes
- Arbi (colocasia)
- Paneer (cottage cheese)
- Yogurt
- Rock salt
- Ghee (clarified butter)
- Sugar
- Lemon
- Cumin seeds
- Green chillies
- Coriander leaves
- Curry leaves
- Ginger
Step 1: Soak Sabudana in water for 4-5 hours. Step 2: Boil, peel and mash the potatoes. Step 3: Boil, peel and cut arbi into pieces. Step 4: Crumble the paneer. Step 5: Mix kuttu atta, singhara atta, and samak rice to make a dough for parathas. Step 6: Prepare the dough for kuttu ki puri and singhara ki puri. Step 7: Heat ghee in a pan and add cumin seeds, chopped green chillies, curry leaves and grated ginger. Step 8: Add mashed potatoes, crumbled paneer, salt, sugar and lemon juice. Mix well to make a filling for aloo ki sabzi. Step 9: Add boiled and cut arbi pieces to the same pan with ghee, cumin seeds, salt and sugar. Mix well to make arbi ki sabzi. Step 10: Drain the soaked sabudana and mix it with roasted peanuts, green chillies, salt, sugar, and lemon juice to make sabudana khichdi. Step 11: Whisk yogurt, add salt and roasted cumin powder to make a raita. Step 12: Make parathas, puris and serve with aloo ki sabzi, arbi ki sabzi, sabudana khichdi, and raita. Garnish with coriander leaves.
