  Ingredients: Kuttu atta (buckwheat flour) Singhara atta (water chestnut flour) Sabudana (tapioca pearls) Samak rice (barnyard millet) Potatoes Arbi (colocasia) Paneer (cottage cheese) Yogurt Rock salt Ghee (clarified butter) Sugar Lemon Cumin seeds Green chillies Coriander leaves Curry leaves Ginger Step 1: Soak Sabudana in water for 4-5 hours. Step 2: Boil, peel and mash the potatoes. Step 3: Boil, peel and cut arbi into pieces. Step 4: Crumble the paneer. Step 5: Mix kuttu atta, singhara atta, and samak rice to make a dough for parathas. Step 6: Prepare the dough for kuttu ki puri and singhara ki puri. Step 7: Heat ghee in a pan and add cumin seeds, chopped green chillies, curry leaves and grated ginger. Step 8: Add mashed potatoes, crumbled paneer, salt, sugar and lemon juice. Mix well to make a filling for aloo ki sabzi.   Ingredients: 2 ripe avocados 1/2 cup cocoa powder 1/2 cup maple syrup or honey 1/2 cup almond milk 1 tsp vanilla extract Pinch of salt Fresh fruit or whipped cream for garnish (optional) Instructions: Cut the avocados in half and remove the pits. Scoop out the flesh and place it in a blender or food processor. Add the cocoa powder, maple syrup or honey, almond milk, vanilla extract, and salt to the blender or food processor with the avocado. Blend or process the mixture until it is completely smooth and creamy. Divide the chocolate avocado mousse into individual serving dishes or bowls. Chill in the refrigerator for at least 30 minutes. Serve with fresh fruit or whipped cream if desired. This chocolate avocado mousse is a unique twist on a classic dessert that is both healthy and indulgent.
